Pumpkin Spice Loaf - Recipe
Ingredients for the Loaf:
- 175g unsalted butter, softened
- 175g light brown sugar
- 3 large eggs
- 225g self-raising flour
- 2 tsp baking powder
- 4 tbsp Flavour Bombs Pumpkin Spice Mix
- 1/2 tsp salt
- 100ml milk
Ingredients for the Icing:
- 150g icing sugar
- 1/2 tsp Flavour Bombs Pumpkin Spice Mix
- 2-3 tbsp milk
Instructions:
- Preheat your oven to 180°C (160°C fan) or gas mark 4. Grease and line a loaf tin.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- In a separate bowl, combine the flour, baking powder, Flavour Bombs Pumpkin Spice Mix, and salt.
- Gradually fold the dry ingredients into the wet mixture, alternating with the milk until everything is well combined.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 45-55 minutes or until a skewer inserted into the centre comes out clean. Allow the loaf to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
- For the icing, mix the icing sugar, Flavour Bombs Pumpkin Spice Mix, and milk until smooth. Adjust the milk to achieve your desired consistency.
- Drizzle the icing over the cooled loaf and let it set.
