Pumpkin Spice Loaf - Recipe


Ingredients for the Loaf:

- 175g unsalted butter, softened

- 175g light brown sugar

- 3 large eggs

- 225g self-raising flour

- 2 tsp baking powder

- 4 tbsp Flavour Bombs Pumpkin Spice Mix

- 1/2 tsp salt

- 100ml milk

 

Ingredients for the Icing:

- 150g icing sugar

- 1/2 tsp Flavour Bombs Pumpkin Spice Mix

- 2-3 tbsp milk

 

Instructions:

  1. Preheat your oven to 180°C (160°C fan) or gas mark 4. Grease and line a loaf tin.
  1. Cream together the butter and sugar until light and fluffy.
  1. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  1. In a separate bowl, combine the flour, baking powder, Flavour Bombs Pumpkin Spice Mix, and salt.
  1. Gradually fold the dry ingredients into the wet mixture, alternating with the milk until everything is well combined.
  1. Pour the batter into the prepared loaf tin and smooth the top.
  1. Bake for 45-55 minutes or until a skewer inserted into the centre comes out clean. Allow the loaf to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
  1. For the icing, mix the icing sugar, Flavour Bombs Pumpkin Spice Mix, and milk until smooth. Adjust the milk to achieve your desired consistency.
  1. Drizzle the icing over the cooled loaf and let it set.
