Pumpkin Spice Cookies
Ingredients
- 150g unsalted butter, softened
- 150g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 250g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 3 tsp Flavour Bombs Pumpkin Spice Mix
- 50g chopped pecans or walnuts (optional)
Instructions
1. Preheat your oven to 180°C (160°C fan) or gas mark 4. Line a baking tray with baking paper.
2. Cream the butter and sugar together in a large bowl until light and fluffy.
3. Beat in the egg and vanilla extract until fully combined.
4. In a separate bowl, mix the flour, bicarbonate of soda, salt, and Flavour Bombs Pumpkin Spice Mix.
5. Gradually add the dry ingredients to the wet mixture, stirring until well combined. If you’re adding nuts, fold them in now.
6. Spoon small dollops of the mixture onto the prepared baking tray, leaving space between each cookie.
7. Bake for 10-12 minutes or until the edges are golden.
8. Cool on the baking tray for a few minutes before transferring to a wire rack to cool completely.
Or your favourite cookie mix, then add 3 tsps of pumpkin spice mix
