Jamaican Curry Goat Recipe
This recipe couldn’t be easier! Create your delicious Curry Goat in just a few simple steps.
SERVES 2
INGREDIENTS:
- 500g Goat meat (bone-in, washed with lime or vinegar)
- 4tbsp Flavour Bombs Curry Goat mix
- 1tbsp Oil (vegetable, sunflower or coconut)
- 200ml Water (half the meat should be covered)
- 1 small potato, peeled and quartered (optional)
- 1 carrot, peeled and sliced (optional)
- Salt to taste
TO MAKE THE CURRY
1. Season the goat. Coat the goat meat with 1 heaped tbsp of Curry Goat Flavour Bomb mix and massage it in. Cover and marinate for at least 1 hour.
2. Sear the meat. Heat oil in a pot over medium-high heat. Brown the goat meat and add another 3 heaped tablespoons of the Curry Goat Flavour Bomb mix. Fry on medium heat for 3 minutes.
3. Simmer the curry. Pour in water (until half the meat is covered). Bring to a boil, stir well then reduce to a low heat. Cover and cook for 2 hours, stirring occasionally. If anything is sticking to your pan, add a smidge more water to loosen it.
4. Add the potato and carrot (optional). Stir in potato and carrot, simmer uncovered on low for 30 minutes until tender and sauce thickens. If not adding potato or carrot, simmer uncovered for 30 minutes until sauce thickens. Add salt and chilli to taste.
5. Serve. Gorgeous with a side of rice, fried plantain and Jamaican coleslaw!
OTHER OPTIONS
Lamb
500g of lamb shoulder or leg cut into chunks
Follow steps 1-5 as normal. Cook for same length of time (2.5 hrs total) until the meat is falling off of the bone.
Chicken
500g skinless thighs or drumsticks
Follow steps 1-2 as normal. At step 3, cook for 30 mins instead on a low heat. Follow steps 4-5 as normal. Cook until the chicken is tender and the sauce has thickened.
